From the boning to the trimming, from the marinade to the cooking and the ageing, expert hands of ham artisans make the products according to the time necessary for their transformation into wonders.
The first step in the production
aprocess is the boning. This phase is made manually using the so called technique of close ham. This technique helps to keep unaltered the integrity of muscles, in accordance with an old tradition.
Later on, starts the trimming that introduces the salting phase of the product.
