Once the necessary days for salting in proper moulds are passed, it starts the cooking phase of the legs. The cooking of Berta ham is made exclusively into water and never stuffed.
This is to guarantee the quality of the product, that cooked at a lower temperature and for a longer time, becomes tender and scented.
There is no need of adding fats to make the meat tender or chemical additives to change its taste and fragrancy.
